The vineyards for this Chablis lie between ‘Montmains’ and ‘Vaillons’, which, if you know your Chablis climats, are both highly-renowned ‘Premier Crus’. This cuvée embodies the pure and crystalline expression of Chablis. Its pale yellow hue with green reflections, delicate bouquet featuring citrus and white flower notes, perfectly harmonises with its mineral character. Lovely overall harmony with remarkable power and length. It pairs perfectly with seafood, oysters, grilled fish or escargots. Ready-to-drink wine with a recommended aging of 5 to 7 years.

It all began a century ago, in the year 1920, with Henri Costal- a man with a deep love for the land and a vision for creating quality wines. Henri’s focus was on organic farming, a commitment that extended to all aspects of the winemaking process. The vineyards at Domaine Henri Costal were cultivated using organic practices, ensuring a sustainable approach to viticulture. This dedication to organic farming not only respected the environment but also influenced the character of the wines produced
Over time, Janine, Henri’s daughter, assumed control of the Domaine, marrying Jean. Their union gave rise to Gilles, Romain’s father, passing down the vineyard’s heritage through the generations. Today, Romain, Henri’s great-grandson, carries on the legacy by tending to the vines and crafting wines infused with the spirit and traditional expertise passed down through generations.
The Domaine Henri Costal has been united with the Domaine Jean Collet, which are the historical vineyards of Romain’s ancestors. Each wines continuing emphasizing quality and paying homage to the rich heritage established over time.
Chablis ‘Vallée de Valvan’ is a special cuvée from the closest terroir of Chablis village. This ancestral plot within the appellation is situated on the characteristic Chablis soils of Kimmeridgian, known for their elevated limestone content. Benefiting from a north-east orientation, the vineyard experiences a cool climate and receives morning sunshine. The cultivation of this plot follows organic farming practices exclusively, utilizing organic amendments and employing mechanical soil work for weeding and ploughing
