The Drappier Carte d’Or Champagne is a sophisticated and expressive Champagne that highlights the elegance and richness of Pinot Noir.

In the glass, it reveals a golden colour with fine, persistent bubbles. The nose opens with inviting aromas of white peach, ripe pear and apricot, along with subtle notes of brioche, almond and a hint of floral.

On the palate, this Champagne is fresh and full-bodied, showcasing flavours of apple, citrus zest and a touch of hazelnut, balanced by a crisp acidity. The finish is long and refined, with a delicate minerality and a touch of spice

For one of Champagne’s most forward-thinking producers, Drappier has no shortage of historic roots. An eighth-generation family business, the house was founded in 1808, and occupies magnificent twelfth-century cellars built by Cistercian monks. Having spearheaded the revival of Pinot Noir in the region, in the 1930s, Drappier continued to innovate.

Drappier is renowned for its commitment to quality, sustainability, and traditional winemaking techniques. The house’s focus on Pinot Noir has led to the creation of Champagnes with distinctive character, complexity, and depth. Drappier follows environmentally conscious practices, including organic viticulture, minimal intervention, and the use of natural yeasts, allowing the terroir to shine in each bottle. The Carte d’Or cuvée reflects Drappier’s heritage and expertise, offering a balanced and expressive Champagne that’s celebrated worldwide.

Over half of Drappier’s production comes from the family’s own vineyards near their base in Urville. Viticulture is close to organic, with horse-drawn ploughing, cover crops and natural fertiliser used.

Winery

Only the juice from the first pressing – the cuvée – was used, and was transferred to tank by gravity. After a natural settling, the alcoholic fermentation took place over two weeks at a low temperature, followed by complete, natural malolactic fermentation. Five percent of the blend was aged for a year in barrel to give extra depth. Minimal sulphur was used during the production.

Its crisp acidity and complex flavours enhance roast turkey with stuffing, balancing the richness of gravy and cranberry sauce. It’s also an excellent choice with honey-glazed ham or roast pork, as the Champagne’s subtle notes of hazelnut and spice complement these flavours.

Try it with a creamy potato gratin or Brussels Sprouts sautéed with pancetta. The Champagne’s richness also enhances mild cheese platters, making it perfect alongside a Christmas cheese board featuring Brie, Camembert and aged Gouda.
