Producer
Zensa Wines is a well-regarded producer focused on creating high-quality, organic wines that reflect the authenticity of southern Italy’s terroir. The name “Zensa” is derived from the Italian word “senza,” meaning “without,” which refers to their commitment to making wine without the use of pesticides, chemicals, or synthetic fertilizers. Zensa Wines follows strict organic farming practices, ensuring that the grapes express their natural flavours and purity. Their dedication to sustainability and respect for the environment is evident in every bottle, offering a taste of Puglia that is as ethical as it is delicious.
The vineyard promote biodiversity and allow plants other than vines to grow in and around the vineyard. Biodiversity helps regulate the vineyard soil by attracting beneficial insects, spiders and predatory mites, as well as providing shelter and food (pollen, nectar and other bugs), and replaces the need for chemical pesticides or insecticides. What cannot be fully controlled through biodiversity can still be managed organically, through the use of naturally-occurring plant or mineral extracts, which leave no residues in the soil.
We also do not use any weed/killers, preferring to let the weeds grow. The weeds and grass are then mowed periodically so that the cut weeds rot back into the soil, which provides us with great organic fertiliser.
Food Pairings
The bold, rich flavours of the Zensa Nero di Troia make it an excellent pairing for hearty, flavourful dishes. Its structured tannins and vibrant fruit complement grilled red meats like lamb or beef, as well as rich pasta dishes like Pugliese orecchiette with sausage and broccoli rabe. The wine’s spice and earthy notes make it a great match for slow-cooked stews or a savory mushroom risotto. For cheese lovers, pair this wine with aged cheeses such as Pecorino or Parmigiano-Reggiano to enhance its complexity and bring out its fruity, savoury nuances.
Wine Region
Puglia, located in the “heel” of Italy’s boot, is one of the country’s most important wine regions, known for its hot, dry climate and fertile soils. The Nero di Troia grape is indigenous to this region and thrives in Puglia’s unique terroir. The combination of the Mediterranean sun and cooling breezes from the Adriatic Sea helps produce grapes with concentrated flavours and balanced acidity. The region’s limestone-rich soils contribute to the wine’s minerality and refined tannic structure, giving the Zensa Nero di Troia its distinctive character.
