In 1870, the courageous and capable young man named Balthasar Ress, a trained butcher, founded the āGasthof Ressā in Hattenheim in the Rheingau. Driven by his motivation to be a good host and to create āFine Wines and Fine Momentsā, he laid the foundation, not only for a long gastronomic tradition and hospitality in the Rheingau, but also for todayās wine estate Balthasar Ress.
In order to be able to preserve their vineyards for future generations, the team decided in 2016 for the operational conversion to a certified organic wine estate. The combination of top Rheingau vineyards, certified organic viticulture and gentle, artisanal grape processing is what makes Ress Family wines so fine.
The āHaseā, or rabbit, is not only the namesake of famous vineyard sites, such as Hasensprung in the Rheingau. It is also a versatile creature that lives in a number of habitats ranging from tundra to grasslands to tropical forests. As a herbivore, it lives on grass, herbs, leaves, and blossoms. Last but not least, the rabbit is known for its high fertility rate. Hasensprung, versatile, grasslands, tropical, herbs, leaves, blossoms, fertility… Inspiration enough for the Ress family to create a wine in honor of the rabbit, White Rabbit Riesling.
